This is a middle eastern salad that is perfect for hot weather.
1 small box of couscous
2 cups chicken broth
1/2 cup or more finely chopped Parsley
1/2 cup or more finely chopped mint
1 cup or more Diced tomato
1 cup or more Diced sweet pepper (red, green, orange, yellow, your choice)
1 cup or more Diced sweet onion
2 cups Diced Cucumber
1/4 cup GOOD Extra virgin olive oil
2 teaspoons garlic powder
2 teaspoons fresh ground black pepper
2 teaspoons salt
juice of one or two lemons
Boil the chicken broth. Add the couscous, stir, and remove from the heat. Let stand 5 minutes.
In a large bowl, place the olive oil, lemon juice, salt, pepper, and garlic powder. Whisk to combine. Add the herbs. Stir well. Add the couscous and toss. Add the vegetable and toss. Eat it all!!
any leftovers.
Do not try to make this dish without the fresh herbs. When you are making it, this looks like a LOT of herbs, but it melds right into the dish. It's not the same without it.
